Winter Fruit Oatmeal Cookies Recipe

These Winter Fruit Oatmeal Cookies are a hit because they have sweet dried fruits, oats, nuts, and a hint of orange.  

INGREDIENTS

– 1 & 1/2 cups (180g) all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon salt – 1/2 teaspoon ground cinnamon – 3 cups (297g) old-fashioned rolled oat – 3/4 cup (170g) unsalted butter, softened – 3/4 cup (150g) firmly packed light brown sugar – 1/2 cup (100g) granulated sugar – 2 large egg – 1 teaspoon vanilla extract – 1/4 teaspoon orange extract – 1/2 cup (74g) chopped dates* – 1/2 cup (57g) dried cranberries* – 1/2 cup (80g) dried currants* – 1/2 cup (60g) chopped toasted pecans (optional)

Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Mix flour, baking powder, salt, and cinnamon. Mix in oats. Set aside.

INSTRUCTIONS

Beat butter, brown sugar, and sugar until frothy using a medium-speed electric mixer. After adding each egg, stir well. Combine vanilla and orange extracts.  

Step 2

Lower mixer speed. Add flour mixture slowly, mixing just until incorporated. Mix in dates, currants, cranberries, and nuts.  

Step 3

Three-tablespoon quantities of dough are dropped onto prepared pans. Flatten each cookie's top.

Step 4

Bake each pan for 12–15 minutes until lightly browned. Cool cookies on pan on wire rack for 5 minutes. Transfer the cookies to a wire rack to finish cooling.
