INGREDIENTS
FOR THE CINNAMON-SUGAR:– 1/4 cup (50g) granulated sugar– 1 tablespoon ground cinnamonFOR THE COOKIES:– 3 cups (360g) all-purpose flour– 1 teaspoon baking soda– 1/2 teaspoon ground cinnamon– 1/2 teaspoon cream of tartar– 1/2 teaspoon salt– 1 cup (226g) unsalted butter, softened– 1 cup (200g) granulated sugar– 1/2 cup (100g) firmly packed light brown sugar– 2 large eggs– 1 teaspoon vanilla extract
TO MAKE CINNAMON-SUGAR:
In a shallow bowl, mix sugar and cinnamon. Set aside while baking cookies.
Step 1

Making cookies:
Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Mix flour, baking soda, cinnamon, cream of tartar, and salt. Set aside.
Step 2
Beat butter, sugar, and brown sugar until fluffy with a medium-speed electric mixer. After adding each egg, mix well. Mix in vanilla.
Step 3
Lower mixer speed. Add flour mixture slowly, mixing just until combined. Shape cookies into balls with a tablespoon of dough and roll in cinnamon-sugar.
Step 4
Place cookies on prepared pans, leaving 2 inches between them. Bake each pan for 8–10 minutes until the cookies are lightly browned and set.
Step 5
Cool the pans on a wire rack for 10 minutes. Remove the cookies from the pan and cool on a wire rack.
