Soft Ginger Molasses Cookies Recipe

These Soft Ginger Molasses Cookies are incredibly flavorful, chewy, and soft cookies that are rich in texture.
INGREDIENTS
– 1 cup (227g) unsalted butter, softened
– 1 cup (200g) granulated sugar
– 1/2 cup (170g) molasse
– 2 & 1/4 teaspoons baking soda
– 1 teaspoon salt
– 1 & 1/4 teaspoons ground cinnamon
– 1 teaspoon ground allspice
– 1 teaspoon ground ginger
– 2 large egg
– 3 & 1/2 cups (420g) all-purpose flour
– coarse sugar or granulated sugar, for coating the cookie
Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Beat butter and sugar until frothy using a medium-speed electric mixer.
Step 1
INSTRUCTIONS
Mix in the molasses, baking soda, salt, cinnamon, allspice, and ginger. Add eggs and stir.
Step 2
Lower mixer speed. Add flour slowly and mix until incorporated. Roll tablespoons of dough into balls. Roll each in coarse sugar.
Step 3
Leave 2 1/2 inches between cookies on prepared pans. Bake 10 minutes. Centers should be soft and puffy but fall as they cool.
Step 4
Let cookies cool on the pan for 10 minutes. Place them on a wire rack to finish cooling.
