Peppermint Sugar Cookie Bars Recipe

For one to two minutes, let the cookies cool on the wire rack that is set up on the pan. Then use a spatula to slowly move them to a wire rack to cool.  

INGREDIENTS

FOR THE COOKIE BARS: – 2 cups (240g) all-purpose flour – 1 teaspoon baking powder – 1/2 teaspoon salt – 3/4 cup (170g) butter, softened – 1 cup (200g) granulated sugar – 2 large egg – 2 teaspoons vanilla extract FOR THE FROSTING: – 2 1/2 cups (275g) confectioners’ sugar, sifted – 1/2 cup (113g) unsalted butter, softened – 3 to 4 tablespoons heavy cream – 1/2 teaspoon peppermint extract – sprinkles or crushed candy canes, for garnish

TO MAKE COOKIE BARS: Preheat oven to 350°F. Grease 9"x13" pan. Mix flour, baking powder, and salt. Set aside.

INSTRUCTIONS

Beat butter and sugar until frothy using a medium-speed electric mixer. After adding each egg, stir well. Mix in vanilla.  

Step 2

Lower mixer speed. Add flour mixture slowly, mixing just until incorporated. Spread batter in pan. Pan batter will be thin.   

Step 3

Bake 20–25 minutes until sides are browned and a pick inserted into the center comes out clean. Pan-cool on a wire rack.  

Step 4

FOR FROSTING: Beat sugar and butter with a medium-speed electric mixer until blended. Mix 3 tablespoons cream and peppermint extract.   

Step 5

Keep beating, adding cream slowly, until the frosting reaches the right consistency. Apply icing to cooled bars. Add sprinkles or crushed candy canes.
