Flourless Chocolate Hazelnut Cookies Recipe

These Chocolate Hazelnut Cookies Without Flour are a chocolate lover's dream because they have two kinds of chocolate...  


– 3 cups (330g) confectioners' sugar – 2/3 cup (56g) unsweetened cocoa powder – 1/4 teaspoon salt – 3 large egg whites, at room temperature – 2 teaspoons vanilla extract – 4 ounces (113g) semisweet chocolate, chopped – 1 cup (175g) chopped hazelnuts (optionally toasted)

Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Sift confectioners' sugar, cocoa powder, and salt into a large bowl. Set aside.  

Step 1 


Stir egg whites until foamy. Mix egg whites and vanilla with sugar. Thick batter is expected. Mix in chopped chocolate and almonds.  

Step 2

Drop 2-tablespoon amounts of cookies into prepared pans, leaving 3 inches between them.  

Step 3

Cookies should be glossy and cracked after 8–10 minutes. Don't overbake to avoid drying.  

Step 4

Let cookies cool on pans for 5 minutes. Place biscuits on wire racks to cool fully.
