Double Chocolate Sandwich Cookies Recipe

Enjoy these soft, rich, and delicious Double Chocolate Sandwich Cookies when you want chocolate.  

INGREDIENTS

FOR THE COOKIES: – 1 & 3/4 cups (210g) all-purpose flour – 1/2 cup (42g) unsweetened cocoa powder, sifted – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1/2 cup (113g) unsalted butter, softened – 1/2 cup (100g) granulated sugar – 1/2 cup (100g) firmly packed light brown sugar – 2 large egg – 1 teaspoon vanilla extract – 3/4 cup (127g) semisweet chocolate chip FOR THE FILLING: – 1/2 cup (113g) unsalted butter, softened – 1/2 cup (55g) confectioners' sugar, sifted – 6 ounces (170g, about 1 cup) bittersweet chocolate (about 70% cacao), melted and cooled – 1/2 teaspoon vanilla extract

Making cookies: Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Mix flour, cocoa powder, baking soda, and salt. Set aside.

INSTRUCTIONS

Beat butter, sugar, and brown sugar until frothy with a medium-speed electric mixer. After adding each egg, stir well. Mix in vanilla.  

Step 2

Lower mixer speed. Add flour mixture slowly, mixing just until incorporated. Mix in chocolate chips.  

Step 3

Drop dough onto prepared pans using a #50 scoop (1 & 1/4 tablespoons). Lightly flatten cookie tops.

Step 4

Bake each pan for 8–10 minutes until the cookies are almost set with a soft middle. Do not overbake.  

Step 5

Let cookies cool on pans for 5 minutes. Transfer the cookies to a wire rack to finish cooling.  

Step 6

MAKE FILLING: Beat butter and confectioners' sugar until frothy using a medium-speed electric mixer. Stir in the cooled chocolate and vanilla until smooth.  

Step 7

Frost the bottoms of half the cooled cookies. Put the other cookies on top so their bottoms face each other.
