Almonds in cookies Adding almonds in three different ways will make the cookie taste even better.
INGREDIENTS
– 1 cup (120g) all-purpose flour– 3/4 cup (75g) almond flour– 1/2 teaspoon baking soda– 1/4 teaspoon salt– 3/4 cup (170g) unsalted butter, softened– 1/2 cup (100g) granulated sugar– 1/4 cup (50g) firmly packed light or dark brown sugar– 1 large egg yolk– 1 teaspoon almond extract– sliced almonds, for topping the cookie
Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Mix flour, almond flour, baking soda, and salt. Set aside.

INSTRUCTIONS
Beat butter, sugar, and brown sugar until frothy with a medium-speed electric mixer. Stir in egg yolk and almond extract.
Step 2
Lower mixer speed. Add flour mixture slowly, mixing just until incorporated.
Step 3
Drop tablespoonfuls of dough into prepared pans, leaving 3 inches between cookies. Flatten cookies to 1/2-inch thickness.
Step 4
Sprinkle sliced almonds on each cookie. Bake cookies one pan at a time for 12–14 minutes until the sides are lightly browned and the tops are firm.
Step 5
On pans, cool for 5 minutes. Transfer the cookies to a wire rack to finish cooling.
