These sugar cookies are fun to decorate and delicious to eat, making them ideal for Christmas parties or cozy baking sessions!
INGREDIENTS
FOR THE COOKIES:– 1 cup (226g) salted butter, softened*– 1 cup (200g) granulated sugar– 2 teaspoons vanilla extract– 2 large eggs– 2 & 1/2 cups (300g) all-purpose flour– 3/4 teaspoon baking powder– 3/4 teaspoon saltFOR THE ROYAL ICING:– 3 cups (330g) confectioners’ sugar, sifted– 3 tablespoons whole milk– 2 tablespoons light corn syrup– 1/2 teaspoon vanilla extract– gel food coloring, optional– sprinkles for decorating, optional
Making cookies:
Cream butter and sugar for 3 minutes with an electric mixer on medium speed.
Mix in eggs and vanilla.
Step 1
INSTRUCTIONS
Mix flour, baking powder, and salt until smooth. On a clean surface, divide the dough into two equal portions.
Step 2
Wrap each half tightly in plastic wrap as a flat disk. Cool for an hour in the fridge. Heat the oven to 350°F. Lining baking sheets with silicone.
Step 3
Place chilled dough on floured surface. Roll dough 1/4- to 1/2-inch thick. (Thick cookies are softer.) To avoid sticking, flour the dough and rolling pin.
Step 4
Cut cookie shapes with cookie cutters. Use all remaining dough by gathering and rerolling. If the dough cracks, wait 5–10 minutes before rolling.
Step 5
Place cut cookies in pans. Each pan should bake for 10 minutes until the edges are lightly browned. Let the cookies cool completely before icing.
Step 6
TO MAKE ROYAL ICING:
Smoothly mix confectioners' sugar, milk, corn syrup, and vanilla. Divide icing into bowls and mix in gel food color for colored icings.
Step 7
Transfer the icing to piping bags and cut the tip with scissors to allow the icing to flow with a little pressure. Sprinkle sprinkles on icing-piped cookie
