– 2 cups (240g) all-purpose flour – 2 teaspoons baking powder – 1 teaspoon salt – 2 cups (400g) granulated sugar + about 1/4 cup (50g) for rolling the cookies – 1/2 cup (118ml) vegetable or canola oil – 1 cup (85g) unsweetened cocoa powder – 4 large eggs – 2 teaspoons vanilla extract – 1 cup (110g) confectioners’ sugar

Mix flour, baking powder, and salt. Set aside. Mix sugar, oil, and cocoa powder in a separate bowl with a medium-speed electric mixer.

Step 1

Mix in the eggs one at a time, then the vanilla. Add flour to cocoa mixture and mix until moistened. Thicker, stickier dough.

Step 2

Cover and refrigerate dough for 4 hours or overnight. Heat the oven to 350°F. Cover baking sheets with parchment or silicone.

Step 3

The remaining 1/4 cup of granulated sugar and confectioners' sugar should be in shallow bowls.

Step 4

Roll tablespoons of dough into balls. First lightly coat each ball in granulated sugar, then heavily in confectioners' sugar. Put dough balls on prepared pans, leaving 2 inches between them.

Step 5

Bake each pan for 12–14 minutes until the centers are almost set. Refrigerate dough between batches. Softer cookies require a shorter baking time. Bake longer for crisper cookies.

Step 6

Cool cookies on pans on wire racks for 5 minutes. Move the cookies from the pans to a wire rack to finish cooling.
