Apple Crumb Cookies Recipe

When it comes to fall baking, these soft apple cookies are a must! They are sweet and full of apples.

INGREDIENTS

FOR THE CRUMB TOPPING: – 1 cup (120g) all-purpose flour – 1/2 cup (100g) firmly packed light brown sugar – 1 teaspoon ground cinnamon – Pinch of salt – 6 tablespoons (85g) unsalted butter, cold and cut into small cubes FOR THE COOKIES: – 2 cups (240g) all-purpose flour – 1/2 teaspoon baking soda – 1/2 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg – 1/4 teaspoon salt – 1/2 cup (113g) unsalted butter, softened – 3/4 cup (150g) firmly packed light brown sugar – 1/4 cup (50g) granulated sugar – 1 large egg – 1/2 teaspoon vanilla extract – 1/4 cup apple butter* – 2 medium apples, peeled and chopped into small pieces (about 2 cups)

TO TOPPING CRUMB: Mix flour, brown sugar, cinnamon, and salt in a medium bowl.

INSTRUCTIONS

Add cold butter and mix with a pastry blender, fork, or fingers until crumbs form. Chill while making cookies.

Step 2

Making cookies: Heat the oven to 375°F. Cover baking sheets with parchment or silicone. Mix flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

Beat butter, brown sugar, and sugar until fluffy with a medium-speed electric mixer. Add egg and vanilla, mix well. Stir in apple butter.

Step 4

Lower the mixer speed. Add the flour mixture slowly, mixing just until combined or a few flour streaks remain.

Step 5

Mix apples into dough. Place 2-tablespoon portions of dough on prepared pans, leaving 2 inches between cookies.

Step 6

Sprinkle crumb topping generously on each cookie and press down gently. Bake one pan at a time for 10–12 minutes until cookies and topping are golden brown.

Step 7

Cookies cool on pans on wire racks for 5 minutes. Move the cookies from the pans to wire racks to finish cooling.
