Vibrant Key West Chicken Recipe

There are many ways to marinate chicken, but this Key West-style chicken recipe is ideal. It's quick and requires a few inexpensive ingredients you may already have, making it ideal for busy weeknights when you have less time to cook.

– 4 boneless and skinless chicken breast – 2 orange – 1 lime – 3 garlic cloves, minced – ½ teaspoon kosher salt – ¼ teaspoon ground black pepper – 1 teaspoon smoked paprika – ½ teaspoon ground cumin – 3 tablespoons honey – 2 tablespoons canola oil – 2 tablespoons soy sauce – ¼ cup chopped parsley – ¼ cup sliced scallion – Lime wedges, for serving

Put the lime and orange zest in a big bowl. Add the lime and orange juice and zest to the mixture.

To the bowl, add the garlic, parsley, canola oil, salt, pepper, paprika, cumin, honey, and soy sauce. Mix thoroughly.

Turn the chicken breasts in the marinade bowl. Marinate for 30 minutes or 4 hours in the fridge.

Bake at 400 degrees Fahrenheit. For two minutes, preheat an oven-safe skillet over medium-high heat.

Add the chicken breasts and sear, without moving, for two minutes on each side. Remove remaining breasts and sear.

Brush remaining marinade on all breasts in the skillet. Baking the chicken for 10-15 minutes or until a meat thermometer in the thickest part of the breast reads 165 F.

Thinly slice the chicken against its grain and serve it hot, garnished with scallions and lime wedges.
