Ghastly Beet Hummus Halloween Appetizer Recipe

Try this Halloween-themed beet hummus with ghost pita chips for a festive take on a traditional Middle Eastern dish. This simple appetizer is a nutrition powerhouse and dark magenta from beets. 

– 3 pita round – 2 tablespoons extra virgin olive oil – kosher salt and black pepper – 2 small red beets, boiled and roughly chopped – 1 15-ounce can of chickpeas, drained and rinsed – 3 tablespoons tahini – Juice of 1 lemon – 1-2 garlic cloves, minced – 1 tablespoon olive oil – ½ teaspoon salt



Start with a parchment-lined baking sheet and a 425 F oven. Divide pita into rounds.

Use extra virgin olive oil, kosher salt, and black pepper on each. Cut several ghosts from each pita round with a cookie cutter.

Use the cookie cutter to outline the shape and cut off the excess with scissors if it doesn't cut cleanly.

Cook ghost-shaped pitas for 5 minutes on a baking sheet until crispy and golden brown. Make hummus while pita chips bake.

Process cooked beets, chickpeas, tahini, lemon juice, minced garlic, olive oil, and ½ teaspoon salt in a food processor.

If it's too thick, add water as needed. Adjust the seasoning by tasting. To serve, ladle hummus onto a platter or bowl.
