Classic Peanut Butter Cookies Recipe

These tasty Peanut Butter Cookies are a standard for a reason. They are a little crispy on the outside and so soft on the inside.  

INGREDIENTS

– 1 & 1/4 cups (150g) all-purpose flour – 1/2 teaspoon baking powder – 1/2 teaspoon baking soda – 1/4 teaspoon salt – 1/2 cup (113g) unsalted butter, softened – 1/2 cup (100g) granulated sugar – 1/2 cup (100g) firmly packed light or dark brown sugar – 1 cup (255g) peanut butter (creamy or crunchy) – 1 large egg – 1 teaspoon vanilla extract – 1 cup (113g) peanuts (optional)*

Preheat oven to 350°F. Cover baking sheets with parchment or silicone. Mix flour, baking powder, soda, and salt. Set aside.

INSTRUCTIONS

Beat butter, sugar, brown sugar, and peanut butter until frothy with a medium-speed electric mixer. Add egg and vanilla, stir thoroughly.  

Step 2

Gradually add the flour mixture and mix until incorporated or a few flour streaks remain. Mix in peanuts.  

Step 3

Two-tablespoon quantities of dough are dropped onto prepared pans. Flatten and cross-hatch the cookies using a fork. Bake one pan at a time for 12-15 minutes until lightly browned.  

Step 4

Cool cookies on pan on wire rack for 5 minutes. Transfer the cookies to a wire rack to finish cooling.
