Classic chicken stroganoff recipe

Classic Chicken Stroganoff is enjoyed worldwide. Traditionally made with beef, stroganoff is believed to have originated in Russia.

2 tablespoons sunflower oil 1 pound chicken thighs, boneless and skinless, diced salt, to taste pepper, to taste 2 tablespoons butter 1 large onion, sliced 1 (¾-pound) carton white mushrooms, sliced 3 garlic cloves, crushed 2 teaspoons paprika 2 teaspoons Dijon mustard 2 cups chicken stock ½ cup sour cream

Add olive oil to a large pan over medium-high heat. Salt and pepper diced chicken thighs. Remove the chicken from the hot oil after 5–6 minutes.

Reduce heat to medium and add butter. Sauté the sliced onion, mushrooms, and garlic for 8–10 minutes until soft. Mix in Dijon mustard and paprika.

Stir in chicken stock to make a sauce. Return the chicken to the pan and simmer for 5 minutes to cook through and reduce the liquid.

Stir in sour cream to finish the sauce. If desired, add Worcestershire sauce and fresh parsley and serve hot.
