The dark chocolate flavor in these thin, crispy chocolate wafer cookies is so great!
INGREDIENTS
– 1 & 1/2 cups (180g) all-purpose flour– 1/2 cup (42g) Dutch process cocoa powder– 1/2 teaspoon baking powder– 1/2 teaspoon salt– 1/2 cup (113g) unsalted butter, softened– 1 cup (200g) granulated sugar– 1 large egg– 1 teaspoon vanilla extract
Mix flour, cocoa, baking powder, and salt. Set aside. Beat butter and sugar until fluffy with a medium-speed electric mixer. Add egg and vanilla, mix well.

Lower the mixer speed. Add flour mixture slowly, mixing just until combined. Cover and refrigerate dough for 30 minutes.
Step 2
Heat the oven to 350°F. Cover baking sheets with parchment or silicone.
Step 3
Place the dough on a lightly cocoa-dusted surface. Roll the dough to 1/8-inch thickness and cut rounds with a 2 1/2-inch cookie cutter.
Step 4
Place cut cookies in pans. Bake one pan at a time for 15–18 minutes, until cookies are just set. Let the cookies cool on wire racks.
